Combine all ingredients in large bowl and toss to coat. Let stand 30 minutes to marinate. Stir and serve. Ingredients 12 02 peeled/deveined medium shrimp, tails removed 1 cup frozen com kernels 1 cup vegetable oil, for frying 1 fresh jalapefio pepper 1 cup Duke's Real Mayonnaise 1/3 cup Thai Kitchen Sweet Red Chili Sauce 3/4 cup sliced green onions, divided 1 tablespoon lime juice 1 (8.5 02) box corn muffin mix 1/2 cup sour cream 1large egg 1 tablespoon seafood seasoning Steps 1. Thaw shrimp and corn. Place oil in Dutch oven on medium-high; heat to 350°F. Chop jalapefio finely, removing membranes and seeds, if desired. 2. Combine mayonnaise, sweet chili sauce, 1/2 cup green onions, and lime juice; stir until blended. 3. Place shrimp in food processor bowl (wash hands) and pulse into small pieces. Combine shrimp with corn muffin mix, jalapefios, sour cream, egg, and seafood seasoning in large bowl; mix until well blended. 4. Scoop rounded tablespoons of batter carefully into hot oil. Cook 2-3 minutes until golden and 160°F. Transfer to paper towel- lined baking sheet. Garnish with remaining 1/4 cup green onions; serve warm with chili-lime aioli. (Makes about 24 fritters.)
